Milpa Collective exists to expand Sydney’s appreciation of the vibrant cuisine and culture of Mexico and Latin America. Brought to the fore through  distinct, regionally focused venues, each location heroes one aspect of the myriad flavours and sensorial experiences of this unique part of the world. All interpreted through the contemporary, elevated lens of Australian dining culture, this is Mexican and Latin American cuisine like you’ve never seen or tasted before.

Milpa Collective was established in 2017 by Mexican-born chef Pablo Galindo Vargas and Chilean co-owner Liber Osorio with a unique mission. The pair were determined to transform the way Australians think about and experience the vibrancy and flavours of Mexican and Latin American food and culture.

Today, their portfolio of nine diverse and bustling venues have done just that, expanding Sydneysiders’ palates daily from the limited world of Tex-Mex to the distinct, rich and colourful sensory experiences of broader Latin culture and cuisine.

Key to this has been Milpa’s seasonal, regional and ingredients-led approach, with each venue celebrating a key area or experience unique to Mexico or Latin America. Whether it’s Oaxacan or Yucatan focus, each location has been carefully curated with contemporary flair, a deep regard for sustainability and an underlying respect for ancestral gastronomic culture.

To walk through any of Milpa’s doors is to be plunged into another world. Whether that’s a beachside fiesta in Tulum fueled by Margaritas and tacos via Taqiza or the charcoal tinged air of a parilla party, with seasonal produce cooking on wood fire at Carbón. Slip behind the velvet curtains at Londres 126 and find yourself in 1950’s Mexico city, or ascend to the lofty heights of Santa Catarina for an opulent, rarefied experience of this Indigenous enclave in the mountains.

Taste moles, infladitas and tamales. Sip on inventive cocktails, rare tequilas and highly limited mezcals. Celebrate life and community in a new light. Milpa invites Australia to become part of their collective and experience a new lease on dining.

Under the umbrella of Milpa Collective, Vina Collective surges as an exploration of good quality and honest wines from Australia and different regions of the world, working closely with family-owned vineyards and winemakers that respect the times and processes of the land, the expression of the terroir and the grape variety. It’s Vina Collective intention to create spaces that showcase unique wines with minimal intervention and in most cases made with organically grown grapes.
