1. A “Milpa” is a millenarian mesoamerican tradition in which farmers plant different crops together. The milpa crops are nutritionally and environmentally complementary.

2. It has been noted that the making of MILPA is the central, most sacred act, one which binds together the family, the community, and the universe.
Milpa Collective exists to expand Sydney’s appreciation of the vibrant cuisine and culture of Mexico and Latin America. Brought to the fore through nine distinct, regionally focused venues, each location heroes one aspect of the myriad flavours and sensorial experiences of this unique part of the world. All interpreted through the contemporary, elevated lens of Australian dining culture, this is Mexican and Latin American cuisine like you’ve never seen or tasted before.

Milpa Collective was established in 2017 by Mexican-born chef Pablo Galindo Vargas and Chilean co-owner Liber Osorio with a unique mission. The pair were determined to transform the way Australians think about and experience the vibrancy and flavours of Mexican and Latin American food and culture.

Today, their portfolio of nine diverse and bustling venues have done just that, expanding Sydneysiders’ palates daily from the limited world of Tex-Mex to the distinct, rich and colourful sensory experiences of broader Latin culture and cuisine.

Key to this has been Milpa’s seasonal, regional and ingredients-led approach, with each venue celebrating a key area or experience unique to Mexico or Latin America. Whether it’s a Mayan, Oaxacan or Yucatan focus, each location has been carefully curated with contemporary flair, a deep regard for sustainability and an underlying respect for ancestral gastronomic culture.

To walk through any of Milpa’s doors is to be plunged into another world. Whether that’s a beachside fiesta in Tulum fueled by Margaritas and tacos via Taqiza or the charcoal tinged air of a parilla party, with seasonal produce cooking on wood fire at Carbón. Slip behind the velvet curtains at Casa Merida and find yourself in a Mayan cocktail spiked dream, or ascend to the lofty heights of Santa Catarina for an opulent, rarefied experience of this Indigenous englave in the mountains.

Taste moles, infladitas and tamales. Sip on Havana style cocktails, rare tequilas and highly limited mezcals. Celebrate life and community in a new light. Milpa invites Australia to become part of their collective and experience a new lease on dining.
Our Venues
Calita is a marisqueria that sits in front of Bondi Beach. Calita works with local suppliers to showcase a rotating selection of fresh, locally and sustainably sourced seafood.

Sonora is a high-end mexican restaurant and mezcal bar, inspired by the cuisine of Sonora, a coastal state in Mexico’s north-west.
Directly translated to ‘taco party’, Taqiza is inspired in Tulum taquerias with a refined selection of mezcals of margaritas.
Carbón means ‘charcoal’ in Spanish, focuses on wood fired dishes using traditional South American ‘parrilla’ techniques.

From the streets of Mexico-city, the palatial elegance of Mérida, to the beaches of Tulum, Sydneysiders have the opportunity to explore all 8 energetic and diverse Mexican and Latin American inspired venues throughout the whole week, whilst sipping on the signature classic cocktail, Don Julio x Milpa Margarita.

Taco Tuesdays

Every Tuesday, enjoy $6 Tacos at Carbon and Taqiza.

We also have a well-stocked bar with boutique tequila. You will feel like you’re sitting under a cabana in the Caribbean, sipping on margaritas and chowing down on some amazing tacos, except you’ll never leave Sydney. For all the tequila lovers, we have $14 margaritas, classic, or spicy jalapeño.  If you feel like a change after a few margys, why not trying $6 Tecate, an all-time favourite Mexican Beer.

Bottomless Brunch

At Carbon, La Palma and Sonora, we are serving all-you-can-eat tacos with bottomless Margaritas on Saturdays and Sundays 12 to 5 pm. It’s $85 per person, but the food is a step up from your average Sydney Mexican fare, plus Margaritas made with top-shelf Mexican tequilas.

From 12pm to 5pm. Sittings are one hour and a half, are the clock starts at the time of your booking!
